Mazorca desgranada is a fast food dish from the northern coast of Colombia, built in layers in a single bowl. Warm sweet corn, salty cheese and allspice-seasoned beef sit on crisp lettuce, then get a crunchy cover of crushed potato chips and a generous pour of tartar sauce. It takes about 30 minutes, feeds three or four, and the beef is easy to swap for chicken, bacon or sausage.

Instructions

Cook the strips of beef in a medium skillet until they are browned and cooked through. Season them with allspice, pepper, salt and Worcestershire sauce.

Warm the canned corn in warm water, then drain it well so the salad does not turn soggy.

Spread the sliced lettuce in a serving dish and lay the drained corn over it.

Scatter the shredded cheese over the corn, then pile the seasoned beef on top.

Cover the whole dish with crushed potato chips, then pour tartar sauce over everything and serve.
