Menemen (Eggs with Onion, Green Pepper, and Tomato)
Menemen is a Turkish dish of eggs scrambled into a stew of onion, green pepper and tomato. It works at breakfast or lunch and comes together in about half an hour. The tomatoes are the key: peel and dice them, or grate them for a looser, saucier base. Red peppers can replace the green, and a little paprika and oregano add warmth. Scoop it up with bread.
Instructions
Prepare the tomatoes first. Blanch, peel, seed and dice them, or take a shortcut and either grind them in a food processor or grate them on a box grater.
Dice the onions and green peppers into medium pieces. Cook them in the olive oil in a wide pan until they are tender.
Stir in the oregano and sweet paprika if you are using them, so the spices coat the vegetables.
Add the tomatoes to the pan and cook for 5 minutes, until they have softened into the onion and pepper.
Stir in the chopped parsley and season with salt and freshly ground black pepper.
Beat the eggs and pour them over the vegetable mixture. Stir gently until the eggs are cooked through.
Serve straight from the pan with Turkish bread. A crisp baguette works as a substitute.
