Mexican Tequila Marinade
This Mexican tequila marinade packs sharp lime, fiery habanero and a smoky sweetness into one small jar. Mesquite honey and a few drops of liquid mesquite smoke give it a campfire note without needing a grill, while the tequila and citrus carry the heat deep into whatever you soak. It keeps in the fridge for two weeks, so one batch covers several meals.
Instructions
Purée the habanero until it is completely smooth, so no flecks of skin remain in the liquid.
Pour the tequila, mesquite honey, liquid mesquite smoke and lime juice into an 8-ounce mason jar. Add the puréed habanero, the salt and the black pepper.
Screw the lid on tightly and shake the jar until the honey has dissolved and the marinade looks evenly mixed.
Store the jar in the refrigerator for up to 2 weeks. Shake it well before each use, since the pepper and chile settle to the bottom.
