Microwave Applesauce

This applesauce cooks in one container in the microwave, so there is no pot to watch and no stirring over a hot stove. The apples simmer in apple jelly, dark maple syrup and fresh orange juice, with a cinnamon stick perfuming the whole batch. The jelly and syrup give it body and depth. You choose the finish yourself, from a rustic mash to a silky purée.

Instructions

Put the diced apples, apple jelly, maple syrup, orange juice and cinnamon stick together in a microwave-safe container.

Cover the container but leave one corner open so steam can escape. Microwave on high for 7 to 8 minutes, until the apples are soft enough to mash easily.

Fish out the cinnamon stick and throw it away.

Mash the apples to the texture you like. A potato masher leaves the sauce chunky, a hand mixer makes it a little smoother, and an immersion blender gives a smooth purée.
