Miso soup is a small pot of savory broth that takes only a few minutes to put together. In Japan it is a daily breakfast staple and a regular companion to other meals. This version starts by frying green onions in sesame oil, which gives the broth a toasted, nutty base. Dissolving the miso in a little water first keeps it smooth, and the tofu, mushrooms and seaweed are all optional.

Instructions

Warm the sesame oil in a small pot over the heat of your choice, just until it is hot enough to coat the bottom of the pot.

Add the minced green onions and cook them for a few minutes, stirring often, until they soften and smell fragrant.

Pour in 2 ½ cups of the water and bring it to a boil.

Stir the miso into the remaining ½ cup of water in a small bowl until no lumps are left, then pour it into the pot.

Turn the heat down. Add the mushrooms, seaweed and tofu, along with the shrimp if you are using them, and let them warm through in the broth before serving.
