Miyan karkashi is a Nigerian draw soup made from sesame leaves, and it is a staple of northern Nigerian home cooking. The leaves give the pot its slippery, silky body, while fermented locust beans add a deep savory edge that stock cubes alone cannot supply. A little potash helps the texture, and a whisk finishes the job. Spoon it alongside tuwo, the soft grain swallows used for scooping and dipping.

Instructions

If you are using fresh karkashi leaves, grind them to a paste. Dried leaves that are already ground can go straight into the pot later.

Bring a pot of water to a boil and add the fermented locust beans.

Add the fish and the meat and let them cook for a few minutes.

Stir in the ground karkashi leaves together with a small amount of potash. Cook for a few minutes, stirring as it heats.

Add the seasoning cubes and keep stirring with a whisk for a few minutes, until the soup is smooth and has the slippery, drawing texture of a draw soup.

Serve the soup hot with tuwo masara, tuwo dawa, tuwo alkama, or tuwo shinkafa.
