Moambe is a rich palm nut soup from Central and West Africa, built on a base of red palm oil and a smooth purée of boiled palm nuts. The nuts are softened, blended and strained, which gives the broth its deep orange color and thick body. Meat is browned first, then simmered with okra, greens and hot pepper. Ladle it over rice or serve it with fufu or plantains.

Instructions

If you are starting with fresh palm nuts, crack them open and take out the kernels. Put the kernels in a pot, cover them with water, bring to a boil, then simmer for 30 minutes until softened.

Drain the nuts and blend them with a cup of water until smooth. Push the purée through a fine-mesh sieve to remove any solids, and set the liquid aside.

Heat the red palm oil in the same pot over medium heat. Add the chopped onion and minced garlic and cook until they smell fragrant and the onion turns translucent.

Add the meat and cook until it is browned on every side. Season with the ground ginger, ground garlic, black pepper and salt, and stir so the meat is evenly coated.

Pour in the strained palm nut liquid and stir well. Add water until the soup reaches the consistency you want, keeping in mind that moambe is usually thick.

Cover the pot and simmer on low heat for about 30 minutes so the flavors come together.

Stir in the okra, the pumpkin or spinach leaves, and the flaked smoked fish if you are using it. Add the chopped scotch bonnet or habanero, using as much as suits your taste for heat.

Sprinkle in the ground crayfish if using, and stir. Simmer for another 10 to 15 minutes, until the vegetables are tender.

Taste and adjust the salt and spices. The soup is ready when the flavors have blended and it has thickened, and it can be served.
