Mocha Buttercream

Mocha buttercream is a quick chocolate and coffee frosting that comes together in one bowl with an electric mixer. The coffee replaces milk or cream, so the flavor reads as roasted and bitter against the sweetness of the sugar, and the cocoa deepens it further. Brew the coffee strong so it does not thin the frosting without adding taste. Use it on cakes, cupcakes or between cookies.

Instructions

Put the softened butter, confectioner's sugar, cocoa powder, vanilla and brewed coffee in a medium-large bowl. Start mixing on a low speed so the sugar and cocoa do not fly out, and keep going until everything is moistened.

Turn the electric mixer to high and beat until the frosting is uniform in color and looks fluffy.

Check the spreading consistency. If it seems too wet to spread, beat in up to ½ cup more confectioner's sugar until it holds its shape.
