Mocha icing is a quick buttercream that gets its character from strong brewed coffee beaten in alongside cocoa. The coffee deepens the chocolate and keeps the sweetness in check, while the vanilla rounds it out. You judge the sugar by eye, stopping when the icing spreads smoothly, so the result is never stiff or cloying. It is the traditional topping for a hot milk cake.

Instructions

About an hour before you plan to bake the cake, take the butter out of the refrigerator so it can come up to room temperature.

Beat the softened butter in a bowl until it is smooth and creamy.

Add the cocoa powder, then the coffee and vanilla, working them in a little at a time so the mixture stays smooth.

Beat in the icing sugar in small additions, alternating with the liquids as you go.

Stop adding sugar once the icing holds together and spreads easily, even if some of the sugar is left over.

Spread the icing over a hot milk cake or another cake.
