Montreal Steak Seasoning
Montreal steak seasoning is a coarse, savory blend of salt, pepper, coriander, garlic, dill and paprika that you can mix from the pantry in a couple of minutes. The cracked coriander seeds and freshly ground black pepper give it a rough texture that forms a crust on a seared steak. Make a batch, keep it in a sealed jar, and it will last for months.
Instructions
Measure all of the spices into a small bowl. Use coarse salt, either kosher or sea, and grind the coriander seeds and black pepper coarsely rather than to a powder.
Stir everything together until the colors are evenly mixed and no pockets of salt or paprika remain. Cayenne pepper can stand in for the red pepper flakes if you prefer.
Rub or sprinkle the mix over steak before cooking. Store whatever is left in an airtight container, where it keeps for several months.
