Mzembe u mgban is roasted African pear, a simple snack from the Tiv people of Nigeria. The fruit is cut up, rubbed with blended pepper and salt, and roasted until tender, with sugar as an option for anyone who wants a softer edge against the heat. It needs only four ingredients and no special equipment. In Tiv homes it is traditionally eaten alongside roasted corn, which makes a good pairing for a casual snack.

Instructions

Cut the African pear into pieces of whatever size and shape you like. Rinse the pieces to wash them off.

Season the fruit with the blended pepper and the salt. Add a little sugar as well if you want it, though it is optional.

Roast the seasoned pieces, stirring them from time to time so they cook evenly. They are ready when they have turned tender.
