Nachos
Nachos are a plate of crisp tortilla chips covered in melted cheddar and served hot. This version keeps things short: a full pound of grated cheese goes over the chips, and a quick 2 minutes in a hot oven is enough to melt it. Mixing the cheese with chopped green chiles and onion before sprinkling spreads the toppings through every layer, so each chip gets some.
Instructions
Preheat the oven to 400°F (200°C). Spread the tortilla chips out on a cookie sheet.
In a bowl, toss the grated cheddar together with the chopped green chiles and onion, if you are using them.
Sprinkle the cheese mixture evenly over the chips.
Bake for about 2 minutes, until the cheese has melted. Serve straight away while it is hot.
