Bokolisa soup is a Nigerian draw soup thickened with ground bokolisa seeds, a staple of the Ikale and Ilaje people. The seeds are beaten into palm oil to make a paste that goes in last, giving the soup its slippery, stretchy body. Beef, ponmo and dryfish bring layers of chew and savor, while jute leaves add a green, silky note. Serve it with pupuru, as is traditional.

Instructions

Mix the ground bokolisa with palm oil until the two come together as a smooth paste. Set it aside while you cook the rest of the soup.

Put the beef, salt, seasoning cubes and onions in a pot and cook them together for 30 minutes. Pour in enough water to cover the meat.

Add the ponmo and the dryfish to the pot. Cook for 15 minutes.

Stir in the ground chile pepper, a little more salt and seasoning, and the sliced jute leaves. Mix gently so the dryfish stays in pieces and does not crumble, then cook for 5 minutes.

Stir in the bokolisa paste and cook for 5 more minutes. Serve hot, traditionally with pupuru.
