Nigerian Caramelized Coconut

Nigerian caramelized coconut is a chewy street candy made from just three things: fresh coconut, sugar and water. It is sold across Lagos and Benin, where travelers buy it to eat on the spot or carry home as a gift. The coconut's own juice goes into the syrup, so the sweetness tastes of the nut itself. Eat it by the handful, or spoon it over ice cream.

Instructions

Carefully crack the coconut open and pour its juice into a bowl to save for later.

Pry the flesh out of the shell and grate it into small, thin pieces.

Put the reserved coconut juice and the icing sugar in a pot, then stir in the grated coconut.

Pour in just enough water to cover the coconut, no more.

Bring the pot to a boil, stirring the whole time so the sugar does not catch on the bottom.

Turn the heat down to low and keep stirring. The candy is ready when the coconut pieces turn brown and look caramelized.

Take the pot off the heat and let the candy cool before serving.
