Nigerian Carrot Pudding
Nigerian carrot pudding is a simple milk-based dessert that can double as a breakfast dish. Carrots are simmered in milk until tender, then peanuts go in, which adds a nutty softness and a little body to the pudding. The sugar is stirred in at the end, so you control the sweetness. Instructions
Put the diced carrots and the milk in a pot and set it over high heat. Bring the milk to a boil, then lower the heat and simmer until the carrots are soft enough to crush easily with a spoon.
Add the peanuts and keep simmering until they have softened.
Take the pot off the heat and stir in the sugar until you can no longer see or feel any grains at the bottom.
Put the pot back on the heat for a few minutes so the sugar finishes melting and the pudding is warmed through.
Turn off the heat and spoon the mixture into a container with a lid.
