Dodo is Nigerian fried ripe plantain, and it needs only four ingredients. The sweetness comes from fruit that has been left to ripen, so the pieces caramelize at the edges as they fry and stay soft inside. A seasoning of salt and ground pepper sets that sweetness against heat. In Nigeria it is a regular partner to jollof rice, rice and beans, and beans porridge.

Instructions

Cut the ripe plantains into small pieces. Put them in a bowl and toss with salt and ground pepper, adding as much of each as suits your taste.

Pour several inches of vegetable oil into a frying pan and heat it. Add the plantain pieces to the hot oil.

Deep fry the pieces, turning them as needed, until every side is golden brown. Lift them out of the oil when they have reached that color.

Serve the dodo with jollof rice or bean porridge.
