Nigerian Moringa Salad (Kwadon Zogale)
Kwadon zogale is a moringa salad from northern Nigeria, made for special occasions and for everyday meals at home. The leaves are only steeped in hot water, so they stay green and tender. Ground kulikuli, the crisp peanut snack, is seasoned with stock cube and salt and tossed through as a nutty, savory coating. Pounded scotch bonnet adds heat, and fried fish is the usual partner on the plate.
Instructions
Bring a pot of water to a boil. Pour the hot water over the washed moringa leaves in a bowl, cover it, and leave the leaves to steam until they have wilted.
Drain off all the water from the moringa and put the leaves into a clean dish.
In a small bowl, mix the ground kulikuli with the stock cube and a pinch of salt until evenly combined.
Add the pounded scotch bonnet, the diced carrot if you are using it, and the thinly sliced onion to the moringa. Sprinkle the kulikuli mixture over the top and toss everything together.
Serve the salad with fried fish.
