Nigerian Peanut Brittle (Nkate Cake)

Nigerian peanut brittle is a crunchy sugar sweet packed with crushed peanuts, and it needs only three ingredients. It is especially loved in northern Nigeria, among the Hausa. The peanuts are crushed with a rolling pin into chunky pieces, so every bite has real texture against the glassy caramel. Cut it into bars while warm for neat edges, or let it set and snap it into shards.

Instructions

Spread the peanuts on a flat surface and crush them with a rolling pin into medium-sized chunks. You want pieces you can see and bite into, not a powder.

Pour the water into a saucepan, add the sugar, and set it over medium heat. Stir until the sugar has completely dissolved.

Turn the heat up and cook the syrup without walking away until it has caramelized and turned a deep amber color.

Stir the crushed peanuts into the hot caramel, then immediately spread the mixture over a greased, heat-safe surface. Work quickly, because the caramel sets as it cools.

While the brittle is still warm, cut it into bars with a greased knife. Or let it cool completely and break it into irregular pieces by hand.

Store any leftovers in an airtight container.
