Nigerian Peanut Burger

Nigerian peanut burger is a crunchy street and party snack of roasted peanuts wrapped in a thin, sweet, spiced shell. The coating is built up in thin layers of beaten egg and seasoned flour, which is why each nut ends up smooth, separate and evenly crisp instead of clumped. Cornflour adds snap, and cinnamon or nutmeg gives a warm edge. Serve it at birthdays or as a quick lunchtime nibble.

Instructions

Pick over the roasted nuts and discard any that are split or broken. Put the good ones in a bowl.

In a second bowl, stir together the all-purpose flour, corn flour, sugar, cinnamon and baking powder. In a third, whisk the egg until it is smooth and fully combined.

Stir 1 tbsp of the beaten egg into the nuts and shake the bowl until they are wet all over. Add 1 tbsp of the dry mixture and shake again to coat. The nuts will clump at first, so pull them apart with your fingertips and dust the sticky ones with a little more of the dry mix.

Repeat the egg and flour coating about five times in total, until the egg is used up and every nut is fully covered and separate from the others. Tip the smooth, coated nuts into a colander and shake gently to drop off loose flour.

Heat enough vegetable oil in a pot for deep frying. Fry the nuts in batches if the pot is crowded, for about 10 minutes, until they are golden all over.

Lift the nuts out of the oil and spread them on paper towels to drain. Let them cool before serving.
