Nigerian Potato Porridge

Nigerian potato porridge is a simple one-pan dish from the Igbo people, built on boiled Irish potato. The potato is cooked until tender, then folded into hot oil with sliced ugwu, onion and chile so the leaves wilt into the starch. Seasoning cubes and salt carry the flavor. Cooks can leave it meat-free or add ponmo, shaki, dryfish or meat for a heartier pot.

Instructions

Rinse the cubed potatoes and put them in a pot. Cover them with water and bring to a boil.

Lower the heat and simmer for 10 minutes, until the potato pieces are tender when pierced. Set the pot aside.

Heat the oil in a pan. Add the sliced pumpkin leaves, onion and chile pepper, then the seasoning cubes and salt, and stir them through the oil.

Stir the boiled potato into the pan and cook for 5 minutes. Take the pan off the heat and serve.
