Nigerian Tiger Nut Milk (Kunnu Aya)
Kunnu aya is a tiger nut milk drunk widely in northern Nigeria, made with nothing more than soaked tubers, water and ginger. The long soak softens the tiger nuts so they blend into a creamy, faintly sweet base without any dairy. Fresh ginger adds a sharp edge, and dates are an optional way to sweeten it. You control the thickness by how much water you add at the end.
Instructions
Put the tiger nuts in a bowl and cover them with water. Leave them to soak for one day.
Transfer the soaked tiger nuts to a blender with the dates, if you are using them, and the fresh ginger. Blend to a paste, adding water a little at a time as needed to keep the blades moving.
Stir in more water to thin the paste to the consistency you like to drink. Add sweetener to taste and stir until it is mixed in.
