Wheat swallow is a smooth, soft dough made from nothing but flour and water, and it is one of the simplest ways to put a Nigerian meal on the table. It is eaten by pinching off a piece, shaping it with the fingers, and using it to scoop up soup. Pair it with egusi, okro or ogbono soup, where its mild taste lets the soup carry the meal.

Instructions

Pour water into a pot and bring it to a boil over the heat.

Stir the flour in a little at a time, mixing constantly. Keep stirring until the mixture is thick and smooth with no lumps.

Add a small splash of water to the pot and let the swallow cook for a few more minutes.

Serve it hot alongside the soup of your choice.
