Nkhwani wa Ndiwo (Malawian Vegetable Fritters)
Nkhwani wa ndiwo is a Malawian vegetable fritter that turns a handful of grated vegetables into a crisp snack. The batter is mostly vegetable, held together with flour and an egg, and a little cornmeal gives the crust a coarse, sandy bite. Carrots, cabbage, onions and green beans all work, and a chopped green chile adds heat if you want it. Serve them warm with chutney or a dipping sauce.
Instructions
In a large bowl, combine the grated vegetables, flour, beaten egg, baking powder and the chopped green chile, if you are using it.
Stir in the cornmeal and mix until everything is evenly combined and no dry pockets of flour remain.
Season the mixture with salt, tasting and adjusting to your preference.
Heat vegetable oil in a frying pan over medium-high heat.
Drop spoonfuls of the mixture into the hot oil, taking care not to splash, and press each one slightly flat with the back of the spoon.
Fry the fritters until they are golden brown and crisp on both sides. Lift them out with a slotted spoon and set them on paper towels to drain.
Cook the rest of the mixture in the same way, then let the fritters cool a little before serving.
