No-Bake Chocolate Cake
This no-bake chocolate cake needs no oven, just a bowl, a pan and some time in the refrigerator. Crushed graham crackers, digestive biscuits or whole wheat biscuits give it a crumbly, biscuit-rich texture, while cocoa and a generous measure of vanilla carry the chocolate flavor. The foil lining makes unmolding easy, so it suits a hot day or a kitchen with no oven.
Instructions
Melt the margarine in a small pan or in the microwave until it is fully liquid.
In a large bowl, mix the sugar and the egg together until they are well combined.
Pour the melted margarine into the egg and sugar mixture and stir to blend.
Stir in the cocoa powder and the vanilla extract until the mixture is smooth and evenly dark.
Add the crumbled crackers and mix well, until every piece is coated and no dry crumbs remain.
Line a cake pan with aluminum foil, then pour in the mixture and press it down so it fills the pan evenly.
Chill in the refrigerator for at least 1 hour. A longer rest is better, since the cake holds its shape more firmly.
Lift the cake out of the pan by the foil, peel the foil away, and serve.
