No-Bake Chocolate Oatmeal Cookies
No-bake chocolate oatmeal cookies come together in one saucepan and set on the counter, so the oven stays off. The cocoa, sugar, milk and butter are boiled for a timed minute, which gives the cookies their fudgy base. Peanut butter and vanilla go in off the heat, and the oats soak up the rest. You can swap in Nutella, or pour the mix into a graham cracker crust.
Instructions
Stir the sugar and cocoa together in a saucepan until evenly mixed. Pour in the milk and stir again, then add the butter and set the pan over medium-high heat.
Bring the mixture to a boil. Once it reaches a rolling boil that keeps bubbling when you stir, keep stirring and boil it for exactly 1 minute.
Take the pan off the heat and add the peanut butter and vanilla. Stir until the peanut butter has melted and the mixture looks smooth.
Stir in the oatmeal until every flake is coated. Work quickly from here, because the mixture starts to set as it cools.
Spoon the mixture onto a cookie sheet right away, leaving space between the mounds so they can spread.
Leave the cookies on the counter for at least 20 minutes until they stiffen. To speed this up, put them in the refrigerator instead.
