No-Bake Matsa Cake
This no-bake matsa cake is a chocolate dessert for Passover that needs no oven and no flour. Crumbled matzah takes the place of cake or biscuit, soaking up a mix of melted butter, cocoa and brown sugar. Raisins plumped in sweet red wine add small pockets of fruit and a little depth. The recipe makes two cakes, so you can serve one and keep the other chilled for later in the week.
Instructions
Stir the brown sugar, cocoa powder, soaked raisins and melted butter together in a large bowl. The butter should have cooled slightly so it is liquid but not hot.
Add the crumbled matzah to the bowl and mix well, until every piece is coated in the chocolate mixture and no dry crumbs remain.
Divide the mixture between two 9-inch springform or other cake pans.
Press and knead the mixture in each pan with your hands to make a flat, smooth top. Pack it firmly so the cake holds together when cut.
Refrigerate for several hours, until the cakes are set and firm enough to slice.
