Nune Soup (Locust Bean Soup)
Nune soup is a quick Nigerian locust bean soup built from just four ingredients. It comes from the Tiv people, who traditionally eat it with pounded yam, known as ruam kanem. Fresh pepper is blended and boiled first, so the base is sharp and bright. Fermented locust beans bring a deep, savory funk, and the fish rounds it out. It is ready in minutes.
Instructions
Blend the fresh pepper until it forms a smooth paste. Put the paste in a pot and boil it for a few minutes.
Add the fish and the rinsed locust beans to the pot, then season with salt to taste.
Stir everything together and cook for a few more minutes, until the fish is cooked through and the flavors have combined.
Serve the soup hot with pounded yam or akpu.
