Oat Rice

Oat rice is plain cooked rice with oat milk standing in for the water. Store-bought oat milk is naturally a little sweet, so the grains pick up a mild sweetness and more body than they would from water alone. The method is the same simple stovetop routine, with steady stirring once it foams. Use it anywhere you would use ordinary cooked rice, as a side or as a base for other dishes.

Instructions

Wash the rice, then drain off the water.

Put the rice and the oat milk into a pot and set it on the stove over medium heat. Cook for about 5 minutes, until foam appears on the surface.

Start stirring with a spoon and keep stirring until the mixture comes to a boil.

Turn the heat down to low and let the rice simmer, stirring as it cooks. It is ready when almost all the liquid has gone.

Take the pot off the heat and serve. Expect a film of oat milk residue to be left on the bottom of the pot.
