This oatmeal raisin cookie is flexible about its fat, which makes it easy to bake from whatever is in the kitchen. The recipe accepts butter, shortening, a butter and oil blend, or applesauce for a softer, moister crumb. Brown sugar gives the dough a deep, molasses sweetness, while cinnamon, raisins, and chopped walnuts add warmth and chew. Mixing the dry ingredients in just until blended keeps the cookies tender instead of tough.

Instructions

Heat the oven to 350°F. Lightly grease a cookie sheet with oil, shortening, or butter.

Put your chosen fat (butter, applesauce, a half and half mix of butter and vegetable oil, or shortening) in a large bowl with the brown sugar, egg, water or milk, and vanilla. Beat with a mixer on high speed until the mixture is well blended.

In a separate bowl, stir together the oats, flour, baking soda, salt, and cinnamon. Add this to the wet mixture and mix only until everything is just combined.

Stir in the raisins and chopped walnuts.

Drop the dough onto the greased sheet by rounded tablespoonfuls, leaving about 2 inches between them.

Bake for 10 to 13 minutes, until the cookies are lightly browned.
