Ojojo (Water Yam Fritters)
Ojojo is a Nigerian fritter made from grated water yam, fried in spoonfuls until crisp and golden. The batter needs no flour or egg, because the yam itself holds the fritters together, and onion, pepper and a stock cube give it a savory edge. Eat the fritters hot on their own as a snack, or serve them with pap (ogi), the way you would akara.
Instructions
Peel the yam and cut it into slices, then rinse the slices under water.
Grate the yam on a grater into a bowl.
Add the pepper, chopped onion and stock cube to the grated yam, then season with salt to taste. Mix everything together until evenly combined.
Heat a layer of oil in a pan. Scoop spoonfuls of the batter into the oil a little at a time, so the pan is not crowded.
Fry each fritter for about a minute, then flip it over and cook until the other side is golden brown.
Serve the fritters hot.
