Onion Rings

Pancake mix makes a surprisingly good coating for onion rings, and this version relies on it instead of a made-from-scratch batter. The sliced white onions soak for half an hour in a salted milk and egg bath, which helps the coating cling before frying. Serve the rings straight from the paper towels as an appetizer, or pack them into a loaf pan and bake for a sliceable onion loaf.
Instructions
Slice the onions and separate the slices into individual rings.
Beat the eggs with the milk in a mixing bowl and season with salt to taste. Add the onion rings and let them soak for 30 minutes.
Put the pancake mix in a shallow bowl. Lift the rings out of the milk mixture, letting the excess drip off, and dip each one in the pancake mix until coated.
Heat oil to 375°F (190°C) and deep-fry the rings until golden brown. Lift them out and drain them on paper towels.
For an onion loaf, pack the fried rings loosely into an 8 x 4-inch loaf pan, without pressing them down. Bake in a 400°F (200°C) oven for 10 to 15 minutes.
Turn the loaf out onto a serving plate and garnish with parsley sprigs.
