Orange Soda

This homemade orange soda is built on a simple sugar syrup that you mix once and keep in the fridge. Because the syrup is stored separately, each glass is made fresh with cold seltzer, so the fizz stays sharp instead of going flat in a bottle. You control the ratio in the glass, making it lighter or sweeter to taste. The method needs only a pan, a funnel and a bottle.

Instructions

Pour the water into a pan that holds at least 2 quarts. Warm or room temperature water both work.

Add the sugar to the water and stir until you can no longer see or feel any grains on the bottom of the pan.

Add the orange syrup concentrate to the sugar water and stir until the color is even throughout.

Set a funnel in the neck of an empty plastic bottle and pour the syrup in. Screw the cap on tightly, then refrigerate the bottle until the syrup is cold.

To serve, fill a glass halfway with cold seltzer water. Pour the chilled syrup from the bottle into the glass, and stir if you want the syrup mixed through evenly.
