Ove is a Nigerian yam pudding that takes the steamed-parcel approach usually associated with bean moi moi and applies it to grated yam. The yam is not cooked first. It is dressed with a sauce of groundnut oil, onion, blended pepper, and flaked boiled fish, then wrapped in leaves and boiled, so the filling sets while absorbing the savory sauce. It is a simple, inexpensive way to turn one root vegetable into a portable meal.

Instructions

Blend the pepper until smooth. Peel the yam, rinse it, and grate it into a bowl.

Clean the fish, removing anything unwanted, and rinse it well. Cook it in water for a few minutes, then drain.

Make the sauce by combining the groundnut oil, chopped onion, blended pepper, and the cooked fish.

Pour the sauce over the grated yam, add salt, and stir until the yam is evenly coated.

Wrap portions of the mixture in the wrapping leaves, folding them closed. Boil the parcels for a few minutes, until the filling has set into a firm pudding.
