Oven-roasted potato wedges need only five ingredients and about 40 minutes, most of it unattended. The high 450°F heat browns the cut sides while the insides turn soft. Tossing the wedges in olive oil before baking gives them an even coating, and a little thyme adds an earthy, savory note. Leave the skins on if you want to save time and keep some extra texture on the edges.

Instructions

Preheat the oven to 450°F.

Wash the potatoes and peel them if you prefer. Cut each one lengthwise into wedges.

Put the wedges in a large bowl and toss them with the olive oil until every piece is coated.

Sprinkle the thyme over the potatoes, along with salt and pepper to taste, and toss again.

Spread the wedges in a single layer in a baking pan so they roast rather than steam.

Bake for 15 minutes, then turn the wedges over. Bake for another 15 minutes.
