Palm Fruit with Syrup
Palm fruit with syrup is a cooling Thai dessert built around the soft, translucent flesh of the palmyra palm. Instructions
Peel the palm fruit and cut it into slices.
Pour the water into a pan and stir in the white sugar. Set the pan over medium heat and let the mixture simmer until the sugar has dissolved into a clear syrup.
Add the sliced palm fruit to the syrup and bring it back up to heat.
Drop in the pandan leaves so they can scent the syrup as it warms.
Let the fruit cool in its syrup, then chill it in the refrigerator. Serve it cold in bowls with ice on top.
