Peanut milk is a simple non-dairy drink made from peanuts, water and a pinch of salt. The salt is the clever part: used in a tiny amount, it takes away the watery feel without making the milk taste salty. Letting the blended mixture rest in the fridge lets the peanut flour settle, so the milk filters cleanly. Adjust the water for thickness and add vanilla or a sweetener if you like.

Instructions

Rinse the peanuts in a colander. If you are using salted peanuts, rinse them well with hot water to wash off the salt.

Put the peanuts in a blender with half of the water and blend on high speed for about 1 to 2 minutes.

Add the rest of the water and blend on high for roughly another minute, until the mixture is smooth.

Pour the mixture into a bottle, add the salt, shake, and leave it in the fridge for a few hours.

Once most of the peanut flour has settled at the bottom of the bottle, pour the liquid carefully through a filter into a second bottle.

When the filter starts to clog with peanut flour, squeeze out the milk and rinse the filter. Pressing the pulp with a spoon before squeezing helps more of the milk pass through.

Sweeten or flavour the milk to taste, for example with vanilla. For a thicker or thinner milk, use less or more water next time.
