Peanut Sauce (Saus Kacang)

Saus kacang is a spicy Indonesian peanut sauce that needs no stove and almost no effort. Natural peanut butter does the heavy lifting, loosened with water and sharpened with lemon, while sambal oelek brings the heat and soy sauce adds salt and depth. Because you season by tasting, you decide how fiery or tangy it ends up. Spoon it over grilled skewers, rice or raw vegetables.

Instructions

Put the peanut butter in a large bowl and add a little water. Stir gently until the mixture loosens and turns smooth.

Stir in some sambal oelek, a squeeze of juice from the lemon, a pinch of salt and a splash of soy sauce.

Keep stirring and taste as you go. Adjust the heat, sourness, salt and soy until the balance suits you, adding more water if the sauce is too thick.

If your peanut butter is the stabilized kind, stir in a small amount of peanut or vegetable oil to help it blend.
