Peanut Sauce
This vegan peanut sauce comes together in one bowl with pantry staples and no cooking at all. Peanut butter gives the body, soy sauce adds salt and depth, and a spoonful of vinegar keeps the richness from going heavy. Brown sugar rounds it off, and the cayenne is there if you want it. Hot water, added at the end, turns the paste into a smooth sauce for tofu and vegetables.
Instructions
Peel the garlic cloves and mince them as finely as you can, so no large pieces end up in the smooth sauce.
Put the peanut butter in a mixing bowl and add the garlic, soy sauce, vinegar, brown sugar and salt. Add the cayenne now if you want some heat.
Stir everything together until it forms a thick, even paste with no streaks of peanut butter left.
Pour in the hot water last, stirring as you go. The paste will loosen into a smooth, pourable sauce, and it is ready when it looks uniform and glossy.
Taste it and serve it with stir-fried tofu and greens or with steamed vegetables.
