Pepperoni Pasta Salad

Pepperoni pasta salad turns a pizza-night flavor combination into a quick bowl you can serve warm or cold. Orzo is the useful choice here, because the small rice-shaped pasta soaks up the Italian dressing and spreads evenly around the salty pepperoni, soft mozzarella and juicy diced tomato. There is no sauce to make and almost no chopping, so it works well for potlucks and packed lunches.

Instructions

Cook the orzo according to the package directions, then drain it very well so no water is left to thin out the dressing.

Put the drained orzo in a large bowl. Add the shredded mozzarella, the sliced pepperoni and the diced tomatoes.

Pour in the Italian dressing and toss well, until every grain of orzo and every piece of pepperoni is lightly coated.

Serve the salad while the orzo is still warm, or cover it and chill it before serving.
