Percolator Punch is a hot spiced fruit drink that uses a coffee percolator to infuse the juice as it heats. The spices sit in the basket where the coffee grounds would go, so the hot liquid cycles through them and picks up brown sugar, clove, allspice, and cinnamon. Tart cranberry balances sweet pineapple, and a pinch of salt sharpens both. It makes about ten servings, which suits a crowd.

Instructions

Pour the pineapple juice, cranberry juice, and water into the bottom reservoir of the percolator. Add the salt and stir it in so it dissolves into the liquid.

Put the brown sugar, cloves, allspice, and cinnamon sticks into the basket in the top compartment, the same place ground coffee would normally go.

Assemble the percolator and turn it on. Let it run for 10 minutes, during which the hot juice cycles up through the spices and back down.

The punch is ready when it is steaming and smells strongly of cinnamon and clove. Serve it hot in mugs or heatproof cups.
