Pezzetti di Cavallo (Pieces of Horse)
Pezzetti di cavallo, literally pieces of horse, is an Italian stew of horse meat slowly cooked in tomato sauce. The meat is browned with onion, then simmered for four hours with carrot, celery, parsley, bay and chilli until it turns tender. The traditional clay pot keeps the heat low and even. Horse meat is lean and deeply flavored, and the sauce is made for mopping up with good bread.
Instructions
Cut the horse meat into cubes. Heat a pan with some olive oil, add the chopped onion and the meat, and fry until the meat is browned all over.
Pour in the tomato sauce and stir to combine with the meat and onion.
Add the carrots, parsley, celery, laurel leaves and chilli peppers, using as much chilli as suits your taste.
Cook over low heat, ideally in a clay pot, which holds a gentle heat for a long braise.
Skim off any foam that rises to the surface, then leave the pot to simmer for 4 hours, until the meat is very tender.
Serve hot with home-made bread to soak up the sauce.
