Philosopher's stew, or filosoof, is a Dutch oven dish that turns cold stewed beef and boiled potatoes into a second meal worth planning for. Layers of potato, meat and fried onion are seasoned with nutmeg, moistened with gravy and topped with buttered crumbs. It is served with apple compôte, whose sweetness cuts the rich meat. Resting the dish in the fridge before baking deepens the taste.

Instructions

Cut the cold stewed beef into small pieces, about 5 mm across.

Melt the fat or butter in a frying pan or small wok. Fry the onion rings until they are golden brown, then set them aside.

Build the dish in an oven-proof dish, layering potatoes, meat and onions on top of one another. Season each layer of potatoes with salt, pepper and nutmeg, and finish with a layer of potatoes on top.

Pour the gravy over the top layer and scatter the crushed bread over everything. Dot the surface with a few lumps of butter.

Heat the oven to 200°C and bake the dish for about 30 minutes. Serve straight away with apple compôte on the side.

For a better flavor, let the assembled dish rest in the fridge for a while before it goes into the oven.
