Pimento Cheese Spread
Pimento cheese is a Southern American staple, and this version keeps it simple: a full pound of sharp cheddar bound with mayonnaise and brightened by a spoonful of cider vinegar. The tablespoon of sugar rounds off the tang, while the diced pimentos add a mild sweetness and flecks of red. Chopped jalapeño is there if you want heat. It takes twenty minutes and makes enough for a crowd.
Instructions
Grate the sharp cheddar into a large mixing bowl if you have not already done so. Grating it yourself gives you a spread with a loose, fluffy texture that holds together well.
Add the mayonnaise, apple cider vinegar, diced pimentos and sugar to the cheese. Season with salt and pepper, starting with a small amount since you can add more later.
If you want some heat, stir in the finely diced jalapeños. Begin with the smallest amount and increase it to suit your taste, as they are entirely optional.
Mix everything thoroughly until the cheese is evenly coated and the pimentos are spread throughout. Taste and adjust the salt, pepper and jalapeños as needed.
Spoon the spread into a well-sealed container and keep it in the refrigerator until you are ready to serve.
