Pimento cheese is a Southern American staple, and this version keeps it simple with four ingredients. Sharp or extra sharp cheddar gives the spread its backbone, while a small amount of lemon juice whisked into the mayonnaise lightens the richness and adds a little tang. Grating the cheese coarsely leaves some texture, so it spreads on bread or crackers without turning into a paste. Mix it ahead and keep it chilled.

Instructions

Drain the jar of roasted red peppers or pimentos well, then chop them into small pieces.

Put the chopped peppers in a large bowl with the coarsely grated cheddar and toss until the peppers are spread evenly through the cheese.

In a separate bowl, whisk the lemon juice and mayonnaise together until smooth.

Pour the mayonnaise mixture over the cheese and peppers. Mix until everything is well blended and the cheese is evenly coated.

Transfer the spread to a container and keep it refrigerated.
