Pineapple Side Dish
This baked pineapple and cheddar casserole is a sweet and salty side dish that turns a can of pineapple chunks into something that sits happily beside a roast or baked ham. The cheese melts into a sugary, buttery filling, while crushed saltines soaked with a little pineapple juice form a crisp, savory crust. It needs only six ingredients and one bowl, and the finished dish takes about an hour.
Instructions
Preheat the oven to 350°F (175°C). Grease a 1½ quart (1½ liter) baking dish.
Drain the pineapple chunks, keeping ¼ cup of the juice aside for later.
In a small bowl, stir the sugar and flour together. Add the melted butter and 1 cup of the cheese, and mix well until evenly combined.
Gently stir the pineapple into the mixture, then pour everything into the prepared baking dish.
Scatter the crushed saltines over the top and drizzle the reserved pineapple juice over them.
Bake uncovered for 30 to 35 minutes, until the edges are bubbling.
Take the dish out of the oven and sprinkle the remaining cheese over the top before serving hot.
