Pizza Soup
Pizza soup takes the toppings of a pizza and puts them in a bowl built on tinned tomatoes and melted cheese. The cheese does double duty, seasoning the tomato base and giving it body, while a teaspoon of cornstarch helps it thicken. Quantities are loose, so you can use whatever ham, bacon, peppers, mushrooms and sweetcorn are in the fridge. Blend the base for a smooth soup, or leave it chunky.
Instructions
Tip the tinned tomatoes into a saucepan along with all of their juice, chopping any whole ones as you go. If the pan looks dry, add a little water.
Grate a generous handful of cheese, more for a large pan, and stir it into the tomatoes. Any cheese will do as long as it melts well.
Stir in the cornstarch if you want a slightly thicker soup. Leave the pan on a low to medium heat, stirring now and then, until the cheese has melted completely. Add more cheese to taste.
If you prefer a smooth soup, blend it at this point. Otherwise leave it as it is.
Chop or slice the ham, mushrooms, peppers, bacon and sweetcorn into small pieces, unless you like a chunky soup. Stir them into the pan and heat the soup again until everything is hot.
Serve the soup hot, with a little extra grated cheese scattered on top.
