Plain Lassi

Plain lassi is a thick, cooling yogurt drink from South Asia, and this version needs only three things. The small measure of water, just a quarter of the volume of the curd, keeps the drink creamy and spoonable rather than thin. Whipping the curd first removes the lumps and gives a smooth body. Sweeten it to your own taste, and serve it very cold alongside spicy food.

Instructions

Put the curd in a bowl and whip it until it loosens and turns smooth, with no stiff lumps left.

Measure out cold water equal to a quarter of the amount of curd you used, and mix it in until the drink is evenly blended.

Stir in sugar a little at a time, tasting as you go, until it is as sweet as you like.

Serve the lassi cold.
