Plantain Pudding
Plantain pudding is a Nigerian steamed savory pudding made from unripe plantain instead of the beans used in moin moin. Because green plantain is starchy and firm, it blends into a thick batter that sets as it steams, with no flour or eggs needed. Tomatoes and pepper give it color and heat, and ground crayfish adds a savory depth. It works as a side or a light main.
Instructions
Put the diced unripe plantain in a blender and blend until the mixture is completely smooth.
Add the pepper and fresh tomatoes to the blender and blend again until smooth, so the batter is evenly colored.
Stir in the salt, seasoning cubes and ground crayfish, adding each to taste. Stir in the 2 tablespoons of vegetable oil.
Grease a mold, such as a small bowl or tin, and pour the batter into it.
Heat a small amount of water in a large pot. Set the filled mold in the pot, cover it, and let the pudding steam for several minutes until it is cooked through.
Turn the pudding out of the mold. Serve it on its own, or with pap, a sauce or grilled fish.
