Polvorones are Spanish shortbread cookies that have become a staple in Latin America too. This version uses just six pantry ingredients and no special equipment. The dough is made with a generous four cups of flour, so it bakes into a dense, crumbly cookie that breaks apart easily. Rolling it into small balls and baking on a bare, ungreased sheet keeps the method simple and the cleanup short.

Instructions

Preheat the oven to 350°F (180°C). Leave the baking sheet ungreased.

Beat the margarine and sugar together in a mixing bowl until the mixture is creamy and smooth.

Mix in the vanilla extract, salt and eggs until they are fully combined with the creamed margarine and sugar.

Add the flour gradually while you keep mixing. Stop when the dough is stiff and hard to stir.

Roll the dough into small balls and set them on the ungreased baking sheet.

Bake for 15 to 20 minutes, until the cookies are golden. Let them cool before you handle them.
