This pork marinade is a pourable mix of broth, red wine, lime juice and dark honey that keeps in the fridge for two weeks. The lime juice brings sharp acidity, while the honey balances it with sweetness and helps meat take on color when cooked. A generous dose of black pepper gives it real heat. Make one jar ahead and you have a ready base for chops, ribs or roasts all fortnight.

Instructions

Measure the chicken broth, red wine, lime juice and dark honey into a large mason jar.

Add the salt, garlic powder and black pepper to the jar.

Screw the lid on tightly and shake until the honey has loosened and the seasonings are evenly mixed into the liquid.

Store the jar in the refrigerator for up to 2 weeks, and shake it again before each use so the pepper and garlic do not settle at the bottom.
